Blanchir les jaunes d'oeufs avec le reste du sucre puis incorporer la farine petit à petit. Faire fondre le beurre avec le chocolat puis mélanger dans la préparation précédente à base de jaunes d'oeuf. Incorporer le blanc d'oeuf petit à petit et délicatement pour obtenir une pâte mousseuse. Verser la pâte sur une plaque recouverte de papier de cuisson (sous forme d'un disque) <b>(Moi, dans un moule à charnière 8po)</b>. Mettre à cuire dans un four préchauffé à 170°C <b>(Moi, 340ºF. mais je suggère 350ºF.).</b> pendant 10 minutes maximum.<br />à la sortir du four, laisser refroidir, <strike>découper un coeur de la taille de la base du moule coeur et garder les chutes (Ne les engloutissez pas, vous allez en avoir besoin plus tard dans le montage :D )</strike><br /><span style="box-sizing: border-box;"><b>La préparation de la mousse chocolat-mascarpone:</b> </span>Faire ramollir la gélatine dans un bol d'eau froide pendant 5 minutes. Dans une casserole mettre l'eau, le sucre et le glucose et porter à ébullition. Ajouter la gélatine et la faire diluer complètement.<br />Retirer du feu, ajouter le chocolat blanc <strike>ivoire</strike> en pistoles ou haché, bien mélanger puis ajouter le colorant. Mixer la préparation (au mixeur plongeant ou au mixeur normal)<br />Ajouter le lait concentré sucré, re-mixer, vérifiez si la couleur vous convient, si ce n'est pas le cas ajoutez un peu de colorant et un coup de mixeur supplémentaire.<br />Si vous préparez ce glaçage la veille, il suffit de le mettre au frais.<br /><b>Dernière étape, le glaçage: </b>Le lendemain matin, démouler le bavarois, ça se démoule très facilement... le poser sur une grille. Le glaçage doit être à environ 30°C.<br />Verser le glaçage sur tout le bavarois (dès sa sortie du congélateur c'est important) là c'est mon étape préférée ^^ Décorer le contour du bavarois avec délicatesse avec des copeaux de chocolat ou des crêpes feuillantines par exemple.<br />Décorer selon votre goût:<strike> j'ai râpé finement du chocolat pour le contour et le décor en chocolat je l'ai fait avec du chocolat fondu que j'ai mis dans une poche jetable et j'ai dessiné des cercles sur du Rhodoïd, on l'enroule et on laisse figer avant de décoller le plastique.</strike><br />Placer au réfrigérateur pendant au moins 4 heures (pour le décongeler).<br />Le glaçage restant peut être conservé au frais dans un pot bien fermé.
